Ingredients:
2 Tbls chopped green chiles
4 eggs
1 Tbls milk
2-3 drops Tobasco sauce (optional)
salt, pepper to taste
1 Tbsp butter or margarine
1/3 to 1/2 cup grated Cheddar or Omnterey Jack Cheese
1/2 cup tortilla chips
Picante sauce (optional)

Instructions:
Migas
(Spanish for "crumbs" because you crumble tortilla chips into the eggs)

In a small bowl, beat together the eggs, milk, tabasco sauce, salt and pepper. Melt butter or margarine in a skillet over medium heat. Cook the eggs, stirring occasionally, until they are almost set. Add the grated cheese, stir, and then quickly crumble the tortilla chips over the eggs and stir them in just as they are setting. Serve alone or with picante sauce.
