Cinnamon Mornings and Chocolate Dreams

Ingredients: 2 cups (10-12) beaten eggs 2 cups milk 1 tsp salt 2 cups warm cooked rotelli (tri-colored if possible) 1/2 cup grated parmesan or romano cheese 1/2 cup pesto sauce 2 cups shredded mozzarella or swiss cheese 1/2 cup pine nuts sour cream and fresh basil sprig or parsley for garnish Instructions: Pre-heat oven to 325 degrees F. Break eggs into large bowl. Beat lightly. Whisk in milk. Add parmesan cheese, salt, and pasta. Stir together well and pour into a 9 x 13 inch pammed, glass baking dish. Bake at 325 degrees F for 45 minutes (or until eggs have set - don't overcook). Add shredded mozzarella and return to oven until cheese melts. Let set for 5 minutes and slice into 8 servings. Garnish with dollop of sour cream and basil or parsley spring. Sprinkle pine nuts over top. To have some fun, add a cup of diced ham to mixture and call the dish "Green Eggs and Ham!" |
