 Mexi-Muffins Recipe

Yield: 12 servings 

Ingredients:
1 1/4 cup corn meal
3/4 cup flour
1/3 cup sugar
1 Tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup sour cream
2 eggs
2/3 cup buttermilk
6 Tbsp melted butter
1 cup whole kernel corn
1/2 + cup shredded cheddar
1/4 cup shredded pepper jack
1/4 cup diced pimento
1/4 cup sauteed diced onion
1/4 cup Ortega diced chilies

Instructions:
Mix dry ingredients. Whisk sour cream, blend in eggs, then buttermilk and butter. Add remainder of ingredients and mix well. Add to dry mix. Spoon batter into paper baking cups in muffin tins. Bake in 350 degree oven. Check at 15 minutes or until golden.
