Ingredients: 2 cups unbleached flour 3/4 cup brown sugar 1 tablespoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon each nutmeg/cinnamon 1 cup nutmeats fresh or dried mint (If using fresh mint, add twice as much, chopped fine. About 1 1/2 to 2 teaspoons of dried or a large handful of fresh are the proportions.) 1 egg, beaten 1 cup applesauce 1/4 cup salad oil Instructions: This bread slices more easily and has a better flavor when cut the next day. Freezes well also. Mix dry ingredients and nuts together. Combine mint, egg, applesauce, and oil. Add to dry ingredients. Stir until just blended. Pour batter into 2 small greased loaf pans and bake at 350º for about 45 minutes. Cool on rack. |
