Ingredients: Provided courtesy of Blue Heron Landing Bed and Breakfast Comox, BC, Canada Sweet Annie's Easy Cheese Sticks The Blue Heron got this recipe from Ann. She wants us to think of her each time we bake these. Non-stick cookie sheets prevent the cheese from sticking to the pans. 1 1/2 cup warm water. 3 tablespoons sugar 1 tablespoon Fermipan yeast 2 cups unbleached flour 1 1/2 teaspoons salt Smidgen of oil 1/2 lb. old cheddar cheese, grated 1 egg, beaten with a little water Optional: sesame seeds, poppy seeds, or pepper Combine water, sugar, and yeast. Stir well. Set oven to 160º F so you will have a warm draught- free place to let the dough rise. In a separate bowl mix flour and salt. Pour into the wet mixture. Beat with an electric beater, adding more flour until you have a shiny thick dough. Add a little more flour, then turn out and knead for a few minutes. Wash the bowl, then rub it with a little oil and place dough in it. Press into bowl. Turn over. Place in warm oven. Turn oven off. Allow time for dough to double in size. Divide the dough in half. Pat to a thick rectangle. Spread with half of the cheese. (At this point, the Blue Heron varies things by adding chopped pepperoni, Greek spices, chopped onions, etc.) Roll up into a log shape. Cut off pieces. Twist, stretch and press onto a cookie sheet. Let rise in the warm oven. When soft to the touch, remove from the oven and reset oven to 350º. Brush the sticks with the beaten egg. You may want to sprinkle with sesame seeds, poppy seeds or pepper or whatever strikes your fancy that day. Bake about 15 minutes. Remove from pans while still slightly warm. Instructions: |
