Ingredients: 3 eggs, beaten 1 cup granulated sugar 1 cup brown sugar 1 cup cooking oil 1 tablespoon maple flavoring 2 cups coarsely shredded zucchini 2 tsp baking soda 2 1/2 cups unsifted flour 1/2 tsp baking powder 2 tsp salt 1/4 cup wheat germ (plain) 1/3 cup sesame seeds 1 cup chopped walnuts Instructions: Beat eggs, sugars, oil and maple flavoring until thick and foamy. Stir in zucchini. Mix soda, flour, baking powder, salt, wheat germ, sesame seeds, and nuts. Add to first mixture and stir just until mixed well. Grease two 9x593-inch pans well. Bake at 350º for 1 hour. Tester inserted in center should come out clean. Cool 10 minutes before removing from pans. |
