Yield: 1 loaves

Ingredients:
1 20-inch loaf of French bread, cut into fourths
1/2 cup mayonnaise
1/3 cup chopped parsley
1 pound cream cheese, softened
3 tablespoons fine herbes
1 jar pimiento, drained and chopped

Instructions:
This is a beautiful bread to serve at tea or brunch. It looks complicated and impossible but it is really quite simple and is very delicious!

Hollow out bread chunks, leaving a 1/2 inch wall. Spread interior with mayonnaise and sprinkle with the chopped parsley.
Combine the remaining ingredients. Pack cream cheese mixture into hollowed out bread.
Wrap in clear plastic wrap to chill overnight.
When ready to serve, cut into slices and arrange on a serving platter. Garnish the platter with fresh watercress and cherry tomatoes.
