Cinnamon Mornings and Chocolate Dreams

Yield: 2 loaves 

Ingredients:
4 large eggs
2 cups sugar
1/2 cup buttermilk
1/2 cup mayonnaise
1 t vanilla
3 1/2 cups all purpose flour
1/4 t salt (optional)
1 t baking powder
1/2 t baking soda
1 t cinnamon
2 medium size tart green Washington apples
1 cup raisins
1 cup chopped walnuts

Instructions:
In a large bowl, beat eggs, sugar, buttermilk, mayonnaise, and vanilla until smooth. In another bowl, mix flour, salt, baking powder, baking soda, and cinnamon. Add to egg mixture and stir until JUST combined.
Core apples and chop. Add to batter with raisins and nuts; stir just to mix. Spread batter evenly in 2 greased and floured 5-9 inch loaf pans. Bake in a 375 degree oven until a wooden toothpick inserted in the center comes out clean, about an hour and 20 minutes.
Let bread cool in pans about 10 minutes, then turn onto a rack to cool completely.
