Ingredients: 6 cups fresh apple juice 4 pounds ripe apples (washed, cored and quartered) 1 1/4 cups brown sugar 1 teaspoon cinnamon 1/4 teaspoon allspice 1/4 teaspoon cloves 1/4 teaspoon salt Instructions: Boil juice until the amount is reduced by half. Add apples and cook over low heat until tender. Stir constantly. When apples are completely cooked, force through a sieve. Return sieved apples to juice and add rest of ingredients. Cook over low heat, stirring until sugar is dissolved. Cook until mixture thickens. Stir continuously. Pour into hot sterile jars and seal at once. |
