Ingredients: These wonderful bites are easy to make and always make guests say "Wow!". The slightly bitter edge of the goat cheese contrasts with the sweetness of the grapes to make for a memorable mouthful. They can be made a day ahead and refrigerated, but leave the pistachio nuts off until serving so they aren't mushy. Choose the plain cheese, not the flavored or the type rolled in cracked pepper. Another variation of this is red grapes rolled in Roquefort cheese and chopped walnuts or pecans, but I like these much better. 2 packages of goat cheese (6-8 ounces) 30 green grapes, washed and completely dried Pistachio nuts, shelled and chopped very small Pat the goat cheese around each grape until covered. Roll in you hand into a perfectly round shape, then roll the covered grape in the ground nuts. Refrigerate to store but let stand at room temperature for an hour before serving to maximize the full flavor of the cheese. Instructions: |
