Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1/4 cup margarine
1 1/2 dozen eggs
1 cup sour cream
1 cup milk
2 teaspoons salt
1/4 cup chopped green onions
1/2 10-ounce package frozen spinach, thawed, drained and squeezed dry in paper towels

Accompaniment (optional):
8-10 slices Canadian bacon (one slice per serving)
1/4 cup maple syrup

Instructions:
Heat oven to 325 degrees. Heat margarine in 13"x9"x2" baking dish in oven until melted, and swirl around to coat dish. Beat eggs, sour cream, milk and salt until blended. Add onions and spinach. Pour into baking dish. Bake about 35 minutes or until eggs are set. Lay bacon slices on cookie sheet and cover with syrup. Heat in oven with eggs. Garnish servings with cherry tomatoes.
