Ingredients: 6 cups regular rolled oats 2/3 cup sunflower seeds 1/3 cup sesame seeds 1 2/3 cups (3 oz.) "ribbon" coconut (also referred to as "chips") 1 1/2 cups (5 oz.) coarse chopped (or sliced) almonds 1/2 cup butter (1 square) 1/2 cup brown sugar 1/2 cup honey 1/2 t salt 1 t pure vanilla extract Instructions: Preheat oven to 300 degrees F.In a large stainless steel bowl, mix: oats, sunflower seeds and sesame seeds. In another bowl mix coconut and almonds. In a microwave-safe bowl mix butter, brown sugar, honey and salt. Bake the rolled oat and seed mixture in oven for 6 minutes, stir and bake an additional 6 minutes. Heat butter and sugar mixture in microwave until butter completely melts, mix thoroughly with a wire whip and then add 1 teaspoon pure vanilla extract (whip together to make a thick sauce). Add coconut and almonds to the baked oat mixture. Pour contents of microwave bowl over mixture, and stir until entire mixture is coated. Bake in a 300 degree F oven for 12-15 minutes. Stir mixture every four minutes so granola will toast evenly. |
