Yield: 6 servings 

Ingredients:
1 mango, peeled & cubed (divided)
1 small melon, peeled & cubed
1 ripe banana, peeled
1 Tbsp lemon juice
1 Tbsp honey
1/2 tsp vanilla
mint leaves and raspberries for garnish

Instructions:
Place melon cubes in blender and process until smooth. Add banana, 1/4 cup mango cubes, lemon juice, honey & vanilla and blend until smooth. Chill mixture thoroughly along with remaining mango cubes.

When ready to serve, divide mango cubes among six parfait cups. Stir chilled mixture and pour equally over the fruit. Garnish with raspberries and mint leaves.
