Ingredients:
5-6 eggs depending on the size of your quiche dish
1/4 cup butter, melted
1/2 cup buttermilk baking mix
1 1/2 cups 1/2 & 1/2
1/2 cup cream cheese cubed
1 cup three cheese blend, grated
3/4 cup smoked Wild salmon, flaked or chopped

Instructions:
Preheat oven to 350 degrees. Beat the eggs, baking mix, and melted butter together. Some limps will remain. Add the 1/2 & 1/2 and stir together. Spray a large pie pan or quiche dish with fat free cooking spray, pour into quiche or pie dish. Sprinkle the mixture with the salmon & cream cheese-press in so it sinks, cover w/grated cheese. Bake for 45 minutes -cover w/foil last 25 min to prevent over browning. Individual dishes may take a little less time. Let rest for a minute or two, slice and serve.
