Cinnamon Mornings and Chocolate Dreams

Ingredients:
Eggs Florentine:

9 eggs
1 pint cottage cheese
8 oz. Swiss cheese, grated
8 oz. Feta cheese, cubed
4 tablespoons butter, softened
2 - 10 oz. packages frozen, chopped spinach, thawed and drained
1 teaspoon nutmeg

Beat eggs slightly; add cheeses and butter and mix well. Stir in spinach and nutmeg; pout into greased 8" ramekins. Bake at 350 degrees for 30 - 45 minutes, or until toothpick inserted in center comes out clean. Serve with Creamy Cheese Sauce.

Creamy Cheese Sauce:

2 tablespoons butter
3 tablespoons flour
2 cups milk
2 cups grated Jack cheese
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon Cayenne pepper

Instructions:
Melt butter; stir in flour and cook while stirring for several minutes. Add milk, stirring constantly until sauce begins to thicken and bubble. Stir in cheese and seasonings, and cook until cheese is melted.
