Ingredients: 1 # Flake/body meat, Blue or Jonah Crab
1 # Maine, all leg crab meat
1 egg
1/2 cup mayonnaise
2 Tbsp chopped parsley
1 Tbsp Worcestershire sauce
1/2 Tbsp Dijon mustard
1/2 tsp salt
1/2 tsp white pepper
1/2 cup bread crumbs
2 Tbsp minced celery
4 Tbsp finely sliced scallion
2 Tbsp hot sauce
Instructions: Blend all ingredients. Chill for 2 hours. Form into about 12, 3 oz. patties. Coat with additional bread crumbs. Chill for one hour. Pan fry. Serve with caper tarter sauce.
