Ingredients: Beat 5 eggs with a splash of water - scramble in omelet pan, sprayed with non-stick spray - until almost set, but still wet on top. Sprinkle with about 2 spoonfuls of topping and about 1/4 cup of shredded cheese and finish off under broiler until cheese is melted and bubbly. Toppings: Tomato, Basil and Mozzarella: 5-6 tomatoes, seeded and chopped 1/2 bunch basil, chopped mozzarella cheese Artichoke, Mushroom and Swiss: 2-14 oz. cans artichokes, chopped 2 lbs. mushrooms, sliced, sauteed in olive oil and a splash of white wine Swiss cheese Mexican: 4 tomatoes, seeded and chopped 2-4 oz. cans black olives, sliced 1 bunch scallions, sliced very thin including some green monterey jack cheese 1/2 of 24 oz. jar of salsa Serve with a spoonful of salsa on center of frittata as garnish. Serving sizes set for 16 frittatas. 1 frittata serves 2 people. Instructions: |
