 Endive Salad Recipe

Yield: 4 servings 

Ingredients:
6 heads endive
2 golden delicious apples
3/4 cups walnuts
6 oz. goat cheese (chevre)
1 tsp olive oil
1 Tbsp sugar
1 Tbsp kosher salt
1 tsp dry basil
1 tsp dry oregano
1 tsp dry thyme
1 tsp chile powder

Champagne Vinaigrette:

1 cup extra virgin olive oil
1/3 cup champagne vinegar
1 Tbsp chopped fresh chives
1 tsp dijon mustard
salt & pepper to taste

Instructions:
Endive Salad with Golden Delicious Apples, Spiced Walnuts, and Crumbled Chevre

Combine dry spices, salt, sugar, & chile powder. Toss walnuts in 1 tsp olive oil and then into spice mixture. Roast in oven at 325 degrees until golden. Chop endive crosswise into 1/2 inch pieces. Dice apples and combine with endive, walnuts (when cooled), crumpled goat cheese, & champagne vinaigrette.
