Ingredients:
2 beaten eggs
1 T water
1 t masala mix*
1 T butter
1 fresh tomato, cut into 1/2" slices
Grated Parmesan cheese
Lemon pepper seasoning
Parsley
Asian chili sauce (optionally diluted with a light tomato sauce)

Instructions:
Combine eggs, water and masala mix and cook in a buttered frying pan as scrambled eggs or an omelet. Cover tomatoes with cheese and broil in the oven for a few minutes until done. Sprinkle cooked tomatoes with lemon pepper and serve with eggs. Garnish with parsley and chili sauce mixture.

* Masala can be purchased at gourmet stores or mix your own.
Masala mix = equal parts ground coriander, cumin, turmeric, mild chili powder and 3 parts mild curry powder.
