Ingredients: 1 pound small mushrooms 1/4 cup wine vinegar 2 teaspoons salt 1/4 cup water 1 bay leaf 6 peppercorns 4 whole cloves 1 1-inch piece of cinnamon stick 1/2 teaspoon snipped dill Instructions: Clean mushrooms and cut off the ends of the stems. In a saucepan, bring vinegar, salt, water and mushrooms just to a boil. Immediately lower the heat so that the mixture simmers. Skim off froth, if there is any. Add the remaining ingredients. Simmer and stir frequently for 20 to 25 minutes or until the mushrooms settle to the bottom of the saucepan. Pour mushrooms and marinade into sterilized jars and seal them closed. Store in the refrigerator. Serve as a condiment, slightly chilled or at room temperature. |
