Ingredients: 2/3 cup sugar
1 1/2 cups flour
2 tsp. baking powder
1/4 tsp. salt
3/4 cup quick cooking oatmeal
1/3 cup corn or canola oil
2 eggs, slightly beaten
2 large bananas, mashed
3/4 cup wild blueberries, fresh or frozen "dry pack"
Instructions: In a large bowl, sift together sugar, flour, baking powder and salt. Stir in oatmeal. Mix in oil, eggs and mashed bananas, stirring only until all ingredients are moist. Fold in blueberries. Pour batter into a greased and lightly floured 9x5 inch loaf pan. Bake in a preheated oven for 60 to 65 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven. Cool in pan for 15 minutes, then remove from pan and place on a wire rack.
