Ingredients: 3 cups peeled potato chucks 2 tablespoons flour 1/2 teaspoon salt 1/4 teaspoon baking powder 1/8 teaspoon pepper 2 egg whites 1 small onion quartered 1 tablespoon canola oil Sour cream substitute green onions sliced Instructions: Place first 7 ingredients in food processor until chopped very fine. Heat oil in non stick pan. Spoon batter by 1 tablespoons into skillet. Cook approximately 1 1/2 minutes per side until golden brown. Continue cooking rest of batter, keeping the latkes warm.
