Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup milk
2 tbsp butter
2 eggs
1 tsp salt
1 tsp baking soda
1 heaping tbsp lemon curd
1 cup all-purpose flour

Instructions:
Heat milk & butter together until butter is melted, warm, but not hot. Warm eggs under hot water, beat slightly, add to milk, whisk in salt, baking soda, eggs and lemon curd. Slowly whisk in flour until batter is combined, a little lumping is okay. Pour into greased and floured muffin pans to 2/3rd full. Bake 15 minutes at 400 degrees, then reduce to 350 and bake another 20 minutes. Serve hot.

The secret to high popovers is an adequately preheated oven, and warm ingredients when you mix them. Cold ingredients don't rise as well. Another version is Key Lime w/key lime curd (same as lemon but w/kl).
