Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
Cut 1 inch slices from a load of good non-crusty French bread; we prefer Pepperidge Farm or Earthgrains International. Soak in a batter made of 4 eggs, 1 pint of heavy whipping cream, 1/4 tsp. nutmeg and 1 tsp. vanilla. Saute over medium heat in melted butter until golden; the centers cook better if the pan is covered.

Sauce: Simmer together 1 jar raspberry jam , 3/4 jar orange juice, and 2 tbsp. of butter. Allow sauce to reduce some-what, and serve it warm over the toast slices. (Other good jam flavors include strawberry, blueberry, and apricot.)

Topping: Mix 8 oz. cream cheese, 1 small can pineapple, and 2 tsp. cream (mix in food processor if possible.) Serve on top of sauced toast, garnished with nuts, strawberry, and mint sprig. We accompany with sausage patties or ham slices.
