Cinnamon Mornings and Chocolate Dreams

Ingredients:
10 eggs
1/2 cup flour
1 tsp baking powder
2 oz. butter, melted
3 cups cottage cheese
1 cup cheddar cheese, shredded
1 10-oz. box frozen leaf spinach
1/2 cup roasted red pepper, chopped
1/3 cup calamata olives, chopped
1 tbsp oregano, dried
Tabasco to taste
Salt to taste
Black pepper to taste
1 cup feta cheese crumbled

Instructions:
Beat together eggs, flour, baking powder, and butter. Stir in cottage cheese, cheddar cheese, spinach (chopped and squeezed dry), roasted red pepper, olives, oregano and other seasonings. Pour into greased individual 6 oz serving dishes (ramekins work well), and sprinkle the tops with feta cheese. Bake at 375 for 30 minutes. Top should be lightly browned.

This crustless quiche is best served hot from the oven in individual dishes!
