Ingredients: 1 cup tea (orange pekoe is best) 1 cup raisins 1/2 cup peel 1/2 cup currents 1 cup granulated sugar 1 egg 1/4 cup melted butter or margarine 2 cups flour 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt Instructions: The tea in this loaf gives a wonderful, albeit, hard to put your finger on taste. Made once, your guests will certainly want it again. Best to keep well stocked with the ingredients. Mix first five ingredients together in a large bowl, cover and let stand several hours or overnight. (Tip: if you have forgotten or don't have enough time, you can heat over low heat for 5 minutes and allow to cool.) Add egg and melted butter, stir well. In separate bowl, mix final four ingredients ensuring they are well mixed and there are no lumps of baking soda or powder. Once mixed, add to wet ingredients. Mix just until moist, do not over mix. Spoon into greased loaf pan and bake at 350 degrees for 60 minutes plus or minus until loaf tests done. Insert toothpick and remove. If it comes out clean, it is done. |
