Cinnamon Mornings and Chocolate Dreams

Ingredients:
2 eggs, separated
1 1/2 cups milk
1/2 cup vegetable oil
2 t vanilla
1 3/4 cups flour
1 T sugar
1 T baking powder
2 t salt


Instructions:

Lightly brush waffle grids with vegetable oil. Close and preheat at medium.
In a small bowl, beat egg white until stiff, not dry. Set aside. In a large bowl, beat egg yolks until thick and lemon-colored. Continue beating, adding milk, oil and vanilla. Add dry ingredients and beat until smooth. Fold in egg whites. Pour a scoop of mixture onto the waffle iron and close.
Remove in about a minute, depending on how well you like your waffles done.
