Cinnamon Mornings and Chocolate Dreams

Yield: 5 servings 

Ingredients:
3/4 cup pancake mix
1/2 cup water
3 eggs
1/4 cup and 1 T Sugar
1 t cinnamon
1/2 cup butter (1T to saute apples and 1 t in each ramekin)
3 cups thinly sliced peeled apples
5 tsp brown sugar
1/4 cup (chopped by hand) pecans
1/2 cup raisins



Instructions:
In a bowl combine pancake mix, water, eggs and 1T sugar. Mix well and set aside. In a small bowl combine 1/4 cup sugar and 1t cinnamon and set aside. Melt butter in a skillet over medium heat and saute apples until tender. Place 1t of butter and 1t of brown sugar in each ramekin - place ramekins in oven to melt butter. When the butter-brown sugar is melted, spoon in sauteed apples. Top with pecans and raisins. Pour 3 1/2 T of batter over the apples. Sprinkle sugar cinnamon mix over the batter. Bake at 450 degrees in convection oven for 12 minutes. Top with raspberry syrup and vanilla yogurt.
