Ingredients: 1 pkg (10oz) frozen chopped spinach, thawed salt/pepper 2 poached eggs-poach for 4 minutes 2 Tbsp butter 2 Tbsp flour 1 cup half-and-half 1 cup shredded cheddar cheese Instructions: Spray two 8 ounce ramekins with Pam. Drain and squeeze excess water out of spinach and line ramekins with spinach (I usually use about 3/4's of the spinach and save the left-over for other use). Salt and pepper the spinach to taste and place poached eggs on top of the spinach. Melt butter in a 12" skillet, over medium heat, and add flour stirring until mixed. Add half-and-half gradually until thickened. Lower heat and add cheese; stir until cheese melts. Pour mixture over eggs and spinach and sprinkle more shredded cheddar over top of cheese sauce. Bake in 400 degree oven for 15-20 minutes or until bubbly. |
