Ingredients: 3 1/2 cups flour 2 cups sugar 1 teaspoon baking soda 1 teaspoon salt 2 teaspoons cinnamon 1 pound blueberries, cranberries, cherries or a mixture 2 eggs 1 1/4 cups oil 1 tablespoon vanilla Instructions: Preheat oven to 350 degrees. Spray 2 standard muffin tins with non stick spray. Combine first 6 ingredients in a large bowl. Whisk eggs, oil and vanilla in a small bowl until thoroughly combined. Add to dry mixture and mix well. Pack batter into muffin tins. Bake about 30 minutes until tooth pick tests clean. |
