Ingredients: 2 1/2 cups milk 2 1/2 cups flour 1 t salt 6 large eggs Instructions: Preheat oven to 425 degrees. Generously grease popover pans. Pour milk into large mixing bowl. Add flour and salt. With wire whisk beat until well blended. (Do not over beat). Add eggs one at a time, beating well after each addition. Pour batter into pans about 3/4 full. Bake at 425 degrees for 20 minutes, then reduce heat to 325 degrees and continue baking 15 -20 minutes. Serve with butter, preserves or honey. Makes 12. Note: if popovers do not rise properly set oven temperature 25 degrees higher. |
