Ingredients: 6 eggs, beaten Pinch of salt/pepper 4 tablespoons butter, melted 1 tablespoon olive oil 1 medium onion, thinly sliced 3 zucchini 2 tablespoons parsley, chopped 1/2 cup Parmesan cheese Instructions: Beat eggs, salt, pepper in medium bowl. Melt 2 tablespoons butter with oil in heavy skillet. When butter foams, add onions. Saute over medium heat. Add zucchini, parsley and garlic until lightly browned. Remove zucchini with slotted spoon, stir into egg mixture and add Parmesan cheese. Melt remaining butter in skillet. When butter foams, add egg mixture. Cook over medium heat 5-6 minutes until bottom of frittata is brown. Place large plate on top of frittata and turn over. Cook 5-6 minutes on other side. Serve hot. |
