Ingredients: 2 eggs, lightly beaten 2 Tablespoons cooking oil 1 Tablespoon honey or brown sugar 1-3/4 Cups whole wheat flour 1/4 Cup wheat germ 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon each ground ginger & cloves 1-1/2 to 2 Cups orange juice 1 apple, cored and chopped 3/4 Cup chopped walnuts Lemon/Ginger Syrup: 1 cup of your favorite pancake syrup 2 tablespoons lemon juice 1/2 to 2/3 teaspoons powdered ginger Instructions: These "almost healthy" pancakes get their name from one of our satisfied guests and are a popular favorite with cycling guests. In a large mixing bowl, mix the eggs, oil and brown sugar or honey; set aside. In a smaller bowl, mix the dry ingredients, then add to the egg mixture. Add orange juice to desired consistency. Batter will be slightly lumpy. Blend in apple and walnuts. Cook on medium-hot griddle using 1/4 cup to measure. Turn once, when top begins to bubble. Serve with warm lemon/ginger syrup LEMON/GINGER SYRUP In a microwave safe container, mix one cup of your favorite pancake syrup, 2 Tablespoons lemon juice and 1/2 - 3/4 teaspoons powdered ginger. Microwave at 70% power for 1 minute or longer, until hot. Pass with pancakes. |
