Yield: 4 servings 

Ingredients:
1/2 pound bacon, cut into 1/2-inch pieces
1 large onion, chopped
5 large potatoes, peeled and sliced julienne-style
Salt and pepper to taste
3 eggs

Instructions:
Saute bacon in large skillet just until crisp.
Add onion.
Cook until onion is transparent.
Add potatoes, salt, and pepper. Mix well.
Cook, covered, until potatoes are tender, stirring occasionally.
Beat eggs in mixer bowl until light and fluffy.
Pour over potato mixture.
Cook, stirring constantly, until eggs are set.
