Cinnamon Mornings and Chocolate Dreams

Yield: 1 dozen 

Ingredients:
2 eggs
1 cup milk
1/2 cup cooked pumpkin
1 3/4 cups all-purpose biscuit mix
2 tablespoons sugar
1/2 teaspoon each of cinnamon, nutmeg and ginger
1/4 cup salad oil
Cider Syrup (see recipe below)

Instructions:
Beat eggs in small mixer bowl on high speed 5 minutes. Stir in milk, pumpkin, biscuit mix, spices and oil.
Pour batter by the tablespoon onto medium-hot ungreased griddle.
Bake until puffed and bubbles begin to break. Turn and bake until golden brown.
Drizzle with cider syrup.

Cider Syrup

1 cup sugar
2 tablespoons cornstarch
1/2 teaspoons pumpkin pie spice
2 cups apple cider
2 tablespoons lemon juice
1/4 cup butter or margarine

Mix sugar and cornstarch in a small saucepan. Stir in spice, then cider and lemon juice.
When smooth, cook over medium-high heat until mixture thickens and boils 1 minute.
Remove from heat. Blend in butter.
Makes 2 1/2 cups.
