Ingredients: 1 cup (2 sticks) butter or margarine, softened 1 cup firmly packed brown sugar 1/2 cup granulated sugar 2 eggs or egg substitute 1 teaspoon vanilla 1 teaspoon orange flavoring 1 1/2 cup all-purpose flour 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1 tablespoon dried grated orange peel (We use Spice Island) 3 cups thick old-fashioned rolled oats (can be purchased at a health food store) 1 cup chocolate chips (raisins can also be used) Instructions: Our guests love this "sweet dreams" treat by the bedside! Soften butter or margarine. Add to sugars and beat together until creamy. Beat in eggs or egg substitute, vanilla, and orange flavoring. Stir in flour, baking soda, cinnamon, nutmeg, and grated orange peel. Mix well. Stir in oats and chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheet and bake 10-11 minutes. Let cool on cookie sheet for a minute or so. Place on paper towel to continue cooling. |
