Cinnamon Mornings and Chocolate Dreams

Yield: 3 servings 

Ingredients:
1 tablespoon unsalted butter
2 eggs
1 cup milk
1 cup unbleached flour, unsifted
1/4 teaspoon salt
1/4 cup confectioners sugar
Fresh fruit


Topping:
1/2 stick butter
2 to 3 cups fresh fruit
Juice of l lemon
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup slivered almonds

Instructions:
Preheat oven to 450 degrees.
Place butter in 10-inch quiche pan and warm for 5 minutes or until it melts. Coat pan completely with butter.
In a mixing bowl, beat eggs and milk.
Add flour and salt, beating with wire whisk until batter is smooth.
Pour batter into quiche pan and bake 15 minutes.
Reduce heat to 350 degrees and bake an additional 7 minutes.

In a medium saucepan, melt butter and add all ingredients except almonds. Stir over medium heat until fruit is soft and well coated.
Serve over pancakes.
Top with almonds and powdered sugar
