Yield: 4 servings 

Ingredients:
1 cup thin pancake batter
8 eggs
splash of vanilla and almond extract
lots of butter in frying pan

Instructions:
Whip everything together. Pour into frying pan with lots of melted butter. Stir with rubber spatula same as making scrambled eggs, on low heat.

Serve with real Vermont maple syrup.
