Ingredients: 5 large ripe pears or apples 1 tablespoon lemon juice 10 tablespoons flour 3/4 teaspoon baking powder 6 tablespoons sugar 1/4 cup vegetable oil 1/2 cup milk 2 eggs 1/2 teaspoon vanilla extract Pinch of salt 1/4 cup butter Sugar to sprinkle 1/4 cup slivered almonds Instructions: Peel, core, and slice the fruit. Sprinkle with lemon juice, turning gently to mix with all of the fruit. In a large mixing bowl, combine the flour, baking powder, sugar, oil, milk, eggs, vanilla, and salt (in that order). Pour batter into small tart molds or into muffin tins. Arrange fruit slices on the top. Dot with the butter and sprinkle with sugar. Sprinkle almonds on top if desired. Bake at 400 degrees for about 20-30 minutes, checking occasionally with a toothpick. |
