Ingredients: 3/4 cup sugar 1/4 cup vegetable oil 1 egg 1/2 cup milk 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 2 cups drained blueberries--fresh, canned, or frozen Crumb Topping: 1/2 cup sugar 1/3 cup flour 1/2 teaspoon cinnamon 1/4 cup softened butter or margarine Instructions: Preheat oven to 375 degrees. Cream sugar, oil, and egg, add milk. Stir dry ingredients into creamed mixture. Carefully fold in blueberries. Spread batter into greased 9-inch square pan or 9-inch deep pie pan. Mix ingredients for crumb topping and spread over batter. Bake 45-50 minutes for fresh blueberries, 30-35 minutes for canned. |
