Yield: 3 servings

Ingredients:
2 eggs
1/4 cup milk
1/4 cup orange juice
1/8 teaspoon salt
1 dash cinnamon

3 or 4 slices of bread
1+ cups of cornflake crumbs

Instructions:
Mix the first five ingredients together in a blender. This mixture may be made the evening before use; blend before using. Preheat oven to 350 degrees.

Use pre-cut loaves of Sweet French Bread (Texas Bread) or any thick sliced bread of your liking.
Remove crusts and slice each on a diagonal (1 1/2 full slices per person is what we serve, you might like to use two full slices per person).

Dip in batter, let excess drip off. Roll in corn flake crumbs, and place on greased sheet.

Bake at 350 degrees for 25 minutes. Bake five minutes, brush with melted butter if you wish. This will make the toast a little more crisp.

Serve with slices of oranges and maple or marmalade syrup.
