Cook Time: 25 min
Yield: 2 servings

Ingredients:
2 eggs
1/4 cup milk
1/4 cup orange juice
1/8 tsp salt
1 dash cinnamon
1/2 tbsp orange extract

3 or 4 slices of bread
1+ cups of cornflake crumbs

Instructions:
Mix the first six ingredients together in a blender. This mixture may be made the evening before use; blend before using. Preheat oven to 350 degrees.

Use pre-cut loaves of sweet French bread (Texas toast) or any thick sliced bread of your liking.
Remove crusts and slice each on a diagonal (1 1/2 full slices per person is what we serve, you might like to use two full slices per person).

Dip in batter, let excess drip off. Roll in corn flake crumbs, sprinkle with dried orange peel and place on greased baking sheet.

Bake at 350 degrees for 25 minutes. Bake 5 minutes, brush with melted butter if you wish. This will make the toast a little more crisp.

Serve with slices of oranges and maple or marmalade syrup.
