 Migas (Southwestern Eggs) Recipe

Ingredients:
1 heaping cup broken tortilla chips
1/2 cup grated cheddar cheese
1 1/2 cup grated Monterey Jack cheese
4 eggs
2-3 chopped green onions
3-5 strips red bell pepper, chopped
2 small tomatoes, chopped
Cilantro (garnish)

Instructions:
"Migas" means "crumbs" and this is a great way to use those leftover tortilla chips in the bottom of the bag. The dish is not spicy, but zing can be added with salsa.

Combine tortilla chips, cheeses, and eggs and set aside. Combine and saute vegetables in frying pan until the liquid from tomatoes is all gone. Add egg mixture and scramble until just done. Garnish with cilantro - serve with salsa (optional).
