Ingredients: 12 new potatoes (12 lbs)
Salt & pepper to taste
1 1/2 cups mayonnaise
1 1/2 Tbsp dijon mustard
Juice of 1 lime
1-2 medium tomatoes, chopped
1/2 medium red onion - finely chopped
2 scallions, chopped
2 Tbsp chopped fresh cilantro
1/2 medium jalapeno peppers - seeded & finely chopped
1/2 tsp cayenne pepper
Instructions: In a large saucepan, cook potatoes until tender, drain and cut into 1/4 inch thick slices.
In a large bowl, stir all remaining ingredients - mix well. Add warm potatoes and toss gently. Cover and refrigerate.
