Ingredients:
1/4 cup butter
6-8 slices of bread
1 package (10 ounces) spinach
2 cups Monterey Jack cheese
2 cups cottage cheese
12 eggs
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
Instructions:
Melt butter in a 9 x 13 inch pan. Cover the bottom of the pan with a single layer of bread. Layer spinach on bread. Mix remaining ingredients together in a separate bowl and pour over bread and spinach. Let set overnight. Bake 45-60 minutes at 350 degrees.
