Ingredients: 1/4 cup sugar 1 1/4 cups flour 2 tsp. baking powder 1/4 tsp. salt 1 egg, beaten 1 Tbsp. oil 1/4 cup milk 1/2 cup fresh orange juice Grated rind of one orange 1 cup fresh cranberries, chopped 1/4 cup chopped walnuts Instructions: These muffins are popular with guests heading out for an early morning of fishing the Missouri River - at least earlier than our usual breakfast hour of 7 am! Preheat oven to 400 degrees. Grease a muffin tin. Combine the first four ingredients in a large bowl. In another bowl, combine the egg, oil, milk, orange juice and rind. Add this mixture to the dry ingredients, stirring just until blended. Fold in cranberries and walnuts. Fill the muffin tins 3/4 quarters full and bake for 15 minutes or until done. |
