Ingredients: 1-9inch baking pie shell
2 egg whites
2 1/2 tablespoons cornstarch
2 cups milk
3/4 cup sugar
1 teaspoon vanilla
pinch salt
1 cup coconut
Instructions: Thelma Reichley, a neighbor, used to make this pie for our guests.
Cook sugar, cornstarch, milk, butter and salt until thick. Add vanilla and cool. Beat in egg whites until soft peaks form. Fold egg whites into custard. Put 1/4 cup coconut in bottom of crust, add the custard and put the remainder of coconut on top of pie. Refrigerate.
