Yield: 8 servings

Ingredients:
2 cups flour
1 cup sugar
2 tsp baking powder
1 tsp salt
1/2 stick (4 Tbsp) butter or margarine
1 egg
1 1/2 tsp vanilla
1/4 cup buttermilk
3 fresh peaches, peeled, stoned and cut into thin wedges
1/2 tsp cinnamon
2 Tbsp sugar

Instructions:
Preheat oven to 350 degrees F. In a mixing bowl, combine the first four ingredients. Cut butter into dry ingredients. Combine, egg, vanilla and buttermilk. Mix into dry ingredients quickly with a fork. The mixture will appear dry and crumbly. Grease or spray a 10-inch cast iron skillet. Spoon half of the batter into the pan. Place peaches over batter; sprinkle with cinnamon and the remaining sugar. Spoon the rest of the batter over the peaches. Bake in preheated oven for 45-50 minutes. Cool slightly.
