Cinnamon Mornings and Chocolate Dreams

Ingredients:
1.5 cups unbleached all-purpose flour
2 Tbsp. double-acting baking powder
2 Tbsp. firmly packed light brown sugar
1 tsp. salt
2 tsp. cinnamon
1 tsp. ground allspice
1.5 cups canned evaporated milk (not condensed)
1 cup solid-pack canned pumpkin
2 large eggs, beaten lightly
1.5 tsp. vanilla
1/4 cup bacon drippings

Instructions:
In large bowl, stir together all dry ingredients. Stir in milk, pumpkin, eggs, vanilla and bacon drippings. Combine well. Heat a greased griddle over moderate heat until it's hot enough to make drops of water scatter over its surface. Pour batter onto griddle by 1/3 cup measures. Cook for 2 minutes per side, or until they are golden and cooked through. Serve with maple syrup, honey or fruit.
