Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 1/4 cups oatmeal (not instant)
2 cups buttermilk (can be made by adding 1 Tbsp. lemon juice to milk)
2 eggs, well beaten
1 cup of regular flour
1 Tbsp. sugar
1 tsp. baking soda
1 tsp. salt
1/4 cup melted butter
1 1/2 to 2 cups blueberries

Instructions:
Combine oatmeal, buttermilk and eggs, set aside (the longer the better). Combine flour, sugar, baking soda and salt. Add to oatmeal mixture, stir. Will be lumpy, do not over stir.

Heat griddle or frying pan till a drop of water dances on top. Add melted butter to mixture (do not over stir). Pour on griddle (or frying pan), add blueberries to top, cook till edges turn dry, flip and cook till golden.

* Can use cooked apples or apple pie in place of blueberries.
