Ingredients: 1/3 cup sugar 1/4 cup cornstarch 1/4 tsp salt (optional) 3 cups milk 1 beaten egg yolk 2 tsp vanilla 2 cups fresh blueberries Instructions: Combine 1/3 cup sugar, cornstarch and salt in saucepan. Blend in milk and cook over medium heat until mixture thickens and bubbles, stirring often. Stir a moderate amount of hot mixture into yolk; return all to saucepan. Cook and stir over low heat for 1-2 minutes. Remove from heat; stir in vanilla. Pour into serving bowl(s). Cover with plastic wrap and chill several hours or overnight. Top with fresh blueberries! * Can use any fruit or combination of fruit. Also, try mixing with equal amounts of yogurt and serve with fruit. |
